Mother’s Day is THIS SUNDAY!!!….
Being somewhat of a new Mom, I get a Little excited about Mother’s Day! Mostly because it makes me feel special to be the mother to my little angel and to look at our little Family and see how blessed we are!
And it’s also a great reason to get the family together, set the table pretty and just enjoy the day!
This year I wanted to come up with a theme and what better theme for South Florida then to do a lunch all about citrus fruits!
Get inspired by this Lunch and make Mom feel a little extra special by throwing her a nice lunch!
You will see below that this lunch is all about Citrus fruits, Flowers in your cocktail and tasty citrus bites! This is a simple lunch that you can throw together pretty easily! (especially if you are in South Florida, when you can just go in your backyard and grab some Palm Leafs!)

Chicken Salad Recipe:
One large rotisserie chicken, deboned and chopped into large chunks. Place in a large mixing bowl and add salt, pepper and dried mustard seeds (to taste). Instead of Mayonnaise I used Fage Greek yogurt, about 3/4 cup. Mix all together then add in sliced almonds, sliced grapes and finely sliced celery.
Naval Orange and Black Cured Olives:
Gouda Cheese on Mini Toast, topped with fig spead
Trifled Goat Cheese paired with Olive crackers
