Fajita Salad
Ingredients:
Ground Chicken
Red Bell Pepper
Corn
Yellow Onion
Diced tomatos
Avocado
Shredded Queso
Lime
Romain Lettuce
Dressing: 1 Avocado, 1/2 tablespoon Fage Greek Yogurt, lime juice , olive oil, salt and pepper (blended in the Vitamix)
Directions:
In a skillet cook ground Chicken, then add Fajita seasoning. Then sauté onions, peppers and corn in olive oil, Salt and Pepper. You will want to only sauté your veggies just enough for them to get hot. (the crunchiness of them will taste great on top of the salad) Once your veggies and chicken are done, chop your Romain lettuce, tomatoes and cut up your avocado. Pour all on top of lettuce then drizzle your avocado dressing and squeeze a little lime juice over the top and sprinkle your shredded queso Cheese and Enjoy! (you could also bake a few corn tortillas and then break apart to add even more crunchiness) Hope you Enjoy!
