This is a recipe that you have got to try this weekend, especially if you have been wanting to try a Gluten-Free recipe! These are really easy to make and are so delicious!!! They taste just as good as regular ole’ pancakes, but even better and good for you! (I Promise!)  We also paired this healthy breakfast with a delicious sweet blended juice.

Gluten-Free Pancakes Recipe

What You’ll Need:

¼ cup  almond milk
• 1 pastured egg
• 1/8 teaspoon pure vanilla extract
• 3 pitted dates
• ¼ cup millet flour
• ½ teaspoon baking soda
• 1/8 teaspoon baking powder
• Pinch of unrefined sea salt
• Organic extra virgin coconut oil, for oiling the skillet
Almond butter

How To Make:

1. In a high speed blender (such as a Vitamix), combine all of the ingredients except for the coconut oil. Process until smooth and creamy.
2. Lightly oil the bottom of a skillet over medium heat. Once the skillet is hot, pour ¼ cup of batter in the pan. Cook until bubbles form on the surface, then flip the pancakes and continue to cook for 1 to 2 minutes, until golden. Repeat until the pancake batter is gone.
3. Serve warm with fresh fruit.

Sweet Carrot Peach Juice Recipe:

What You’ll Need:

  • 1/3 cup fresh carrot Juice
  • 1/3 cup fresh orange Juice
  • 2 whole peaches, sliced
  • 1 frozen bananas
  • Handfull of frozen pineapple

(If you do not have frozen fruit, just add ice in the blender)

How To Make:

It’s so simple! Just add all ingredients to a blender (Vitamix is suggested) and blend until liquified. If the juice feels like it is getting warm from being blended, just add in more ice and if the is too “smoothie like” add in more orange or carrot juice.
