12 Oct Recipe:: One Pot, Three Bean Chicken Chili
It may not be chilly outside (we are in South Florida and its still 90 degrees outside) but it is October after all! Fall around here is truly a “State of mind” so, even though the temperatures do not say it, our mind and hearts are ready for Fall and with that whats better than some good ole chili!
Below I am sharing my very simple and quick ground chicken Chili recipe! It was absolutely delicious… (I know I’ve done something right when my kids pretty much lick the bowl clean). This recipe took no time to make and the best part… there was little mess involved…. you literally chop and combined it all in one pot!
With this chili I went with ground chicken breast, of course you can substitute for ground meat or whatever you would like.
1 whole sweet yellow onion (diced)
3 garlic gloves (diced)
Bell peppers (red, orange, yellow and you can also do green)
1 lb ground chicken breast
3 different types of beans (cannellini, black and kidney beans)
Tomatoes (fresh cherry, 1 can of tomato sauce)
Taco Seasoning (or Chili seasoning)
1 tablespoon cumin (what gives it such a good flavor)
Salt and pepper (to taste)
Sautee onions, garlic, peppers, and ground chicken. Once onions are clear you may add in beans, tomatoes and seasoning. Stir all together, cover pot on medium low and let cook for about 30 minutes. Once its ready, pour into a bowl, top off with cheese, sour cream and even jalapeno peppers and enjoy!
