One of my all time favorite soups…. and not to mention probably one of the easiest soups to make…. my Tortilla Soup. This recipe is truly so simple to make! Its all made in one pot and you pretty much add in everything but the kitchen sink!…lol whenever I need my little taste of Mexican food fix and don’t feel like going out to dinner for it, this is what I make! For this recipe you may want to invite over some friends or family because it makes a good bit!!

I never got a chance to take a photo of the soup completed because once it was ready to eat… It was GONE!! (its that good) Hope you enjoy the recipe!

Ingredients:

  • I bought a rotisserie chicken, Lemon Flavor (you can buy a whole chicken and then de-bone it, but the rotisserie chicken is the quick way to go if you are looking for a quick meal)
  • 1 large sweet onion
  • Olive Oil, Salt & Pepper
  • Cilantro
  • 3 limes
  • Taco Seasoning
  • 3 cups of chicken Broth
  • Tomatoes (I like to use tomatoes on a vine, about 6 of them)
  • Frozen sweet corn
  • 1 can of Black beans
  • Homemade style corn tortillas (slice them into strips)
  • Mexican style shredded cheese

Recipe:

In a large pot cook down your onions with salt, pepper and olive oil until they are clear. Add in about half of your chopped cilantro and squeeze 3 limes into the pot (you can add as much or less, depending on your taste). Then add in your diced tomatoes and your taco seasoning (read the back of your seasoning packet for how much water to add to your seasoning) let all of those flavors cook together for about 5 mins. Then add in your frozen corn and black beans. Last you will pour in your 3 cups of chicken broth, bring to a boil and then add in your chicken and sliced tortilla strips. Let all your flavors cook for another 5-10 mins and turn down the heat to medium low and add about 1 cup of shredded cheese. Mix all together and there you go! Garnish your personal bowl with a little extra cheese on top, a little extra cilantro and lime squeeze. Another tip I like to do is toast a few tortilla strips in the oven to put ontop as well! Its all SO de-lic-ious!
