27 Aug The Perfect Summer Salad
This salad is So delicious and SCREAMS summer! My husband and I enjoyed this salad so much that we decided to make it two nights in a row! Its a quick and easy salad to make with yumminess in every bite!
- Butter lettuce
- Spring mix salad (optional)
- 2 corn ears
- 2 chicken breast
- Bacon (I chose Applegate Naturals bacon, a healthier choice 🙂 )
- Cherry tomatoes
- Crumbled Feta cheese
- Sliced avocado
First you will want to cook your meats and corn, all separately of course! I chose to cook everything in a grilling skillet instead of using an outdoor grill (seemed much quicker, but also because we no longer have a grill.. hu, hum,not going to mention any names, but I live with a redecorating, sweep and vaccum everyday kinda man, so you can imagine why anything thats dirty doesn’t stick around our house for very long, but I must say I always love having everything so clean! ;)).Now back to the recipe….
First cut the corn off the cob then pour into a skillet. Cook the corn with a little olive oil, salt and pepper just until it starts to get nice and crisp. Once the corn is finished, pour into a bowl and set aside to cool. Then cook your chicken breast, either chopping it before you cook it or after. Once the chicken is done, place to the side and let cool. Last, cook your bacon, about 4 bacon strips should be plenty. Once the bacon is done and cooled crumbled it into a small dish. Once all of your meats and corn are done, you will want to clean your lettuce, tomatoes, blueberries and prepare your avocado slices. Once everything is ready start adding in all ingredients, but leave the avocado slices to the side!
Salad Dressing: This salad is so hearty with so many delicious flavors that you don’t want a salad dressing that is going to over power the salad. So, for this dressing, its simple!
- 1 TBSP olive oil
- 1/2 TSP honey
- 1/3 TSP balsamic
- 1 whole lemon (squeezed)
- pinch of salt and pepper
whisk all together, pour over salad,add avocado slices to the top and Enjoy!!
