Tomato-Orange Soup with Cheesy Ciabatta Croutons

08 Oct Tomato-Orange Soup with Cheesy Ciabatta Croutons

What You’ll Need:

  • 1 finely chopped sweet onion
  • 4 garlic cloves, roughly chopped
  • 1 cup fresh orange juice
  • 3 large tomatoes, diced
  • 2 tsp. kosher salt
  • 1/2 tsp. olive oil
  • 1 tsp. Sherry vinegar

How to make:

In a large cooking pot, pour olive oil, chopped onions,salt and cook for about 5 minutes or until onions are translucent. Stir in garlic and add  in chopped tomatoes. Mix all together and then pour in orange juice. bring everything to a boil and then decrease to medium-low and cover for about 20 minutes. (remember to stir occasionally)

Once all ingredients are cooked you will then want to pour ingredients into a blender (we recommend a vitamix, but a food processor or blender will do the trick too!) once soup is smooth pour back in cooking pot .

For the croutons:

  • Fresh mozzarella
  • sliced ciabatta bread
  • salt, pepper and olive oil

slice 1/2 inch slices of ciabatta bread, place on a cookie sheet. Drizzle olive oil, salt and pepper over the top. then cut thick slices of fresh mozzarella and lay on top. Cook oven on high broil for about 5 minutes or until the cheese is golden brown.
