Vegan:: Carrot Ginger Coconut Soup

Try this delicious Soup that has a great kick of ginger to it!

It’s healthy, taste great and is so easy to make!… I loved it so much that I’m enjoying it again as I write this post!

Ingredients:

5-8 Large carrots, chopped

1 yellow onion, chopped small

2 tsp fresh ginger, minced

2 tsp curry powder

2 cups of vegetable broth

1 can of coconut milk

Sea salt, to taste

How to Make:

Simmer carrots, onions, ginger and curry powder in vegetable broth for 20-25 minutes, or until carrots are soft.

Allow the ingredients to cool and then puree in a blender {recommend the vitamix}

Return to heat and stir in coconut milk until well combined. Season with salt and pepper to taste.

This soup taste great served hot or cold.
